Funchi: Polenta the (Easier) Aruban Way

You may know that my dad is from Aruba, One Happy Island.

If you are not familiar with Aruba, it is part of the Netherlands Antilles, about 13 nautical miles off the coast of Venezuela (18 or so regular miles), south of the Caribbean hurricane zone, and notable for its absence of rainfall and its white sand beaches and crystalline waters. With sunshine guaranteed year-round, it is extremely popular with honeymooners and northern folks from wet places who want to know their vacation dollars won’t be wasted on a week in a monsoon.

It’s a gorgeous little place – and I mean little – Aruba is about 30 km (19 miles) long and about 8 km (5 miles) wide. You can drive around the island and dispatch with most of your touristic cultural obligations in about half a day, and return in good conscience to your beach towel for the duration of your stay.

Mind you, the natives, while welcoming, may make you wonder what your own educational system is doing wrong. Virtually everyone in Aruba speaks English well, in addition to Papiamento – the local language-, Dutch – which they study in school, and Spanish – which most people speak and understand tolerably well. Yeah, four languages per person is par for the course. Just putting it out there.

Pedro’s always made Aruban dishes here at home, and one of my favorite sides in the world is funchi – a corn meal mush that gourmands will recognize it as a close cousin of polenta. Lazy – I mean pragmatic – cooks like myself will recognize it as a lot less work than said continental cousin. Rather than spending a sweaty half hour or more over a steaming copper pot busting your biceps turning it with a wooden spoon, this takes about ten minutes and the results are very satisfactory.

Then you can pile any number of savory dishes on the top – fish with onion and pepper sauce (mojo isleno) is one of the most popular. I love slabs of it grilled; it makes the inside creamier and the outside crunchier, like  surullitos or corn fritters, without the grease.

Since Pedro decided to abandon his crazy-ass diet for lunch on Father’s Day (and then promptly wrote me out of the food prep), I decided to make him some heritage food. You can check out the original VisitAruba recipe I adapted this from by clicking the link (and troll around the page to learn more about this tiny paradise). Be it known that Pedro provided critical advice for this, so while it is made by a second-generation Aruban (me), it was supervised by an real-live authentic native. And it was a terrific success — dear old Padushi started speaking Papiamento right away. Dushi! Masha bon, danki……

Topped with grilled salmon – not quite an Aruban traditional dish, but delicious just the same…Funchi is as adaptable as any Caribbean Islander

Funchi (Aruban Polenta)

1 ¼ Cups cold water

1 ½ Cups coarse/stone ground corn meal

½ tsp salt

1.5 Cups boiling water

1 Tbs olive oil (plus a little bit for greasing a mold or bowl to turn the funchi into)

In a heavy saucepan, mix cold water, corn meal, and salt. When relatively smooth, with no big lumps, stir in the boiling water and oil and bring to a rapid boil. Lower heat to medium low and continue to cook, stirring continuously, for another five minutes, or until the mixture is stiff and pulling away from the sides. Turn the funchi into a greased mold or bowl and cover with a plate. Turn it over onto the plate and allow to cool slightly before scooping out and serving. Or allow to cool completely, cut into one inch slices, brush with oil and grill until crisp on both sides.

In the supermarket the other day, Leandro asked for fish for lunch. This is not in itself odd…everyone in this family is island-born somehow, we all love fish, and he is a huge fan of River Monsters on Animal Planet (which I strongly encourage, because I think Jeremy – the mad fisherman — is quite hot and much better to watch with my son than Diego the animal rescuer – why, why, why do he and his bloody cousin, Dora the Explorer, have to shout everything they say? –  or Phineas and Ferb – who are quite sweet, but not nearly as compelling as flesh and blood Jeremy and his sunburnt, craggy-faced, understated British delivery, rod-wielding self ).

So I picked up some wild caught tilapia to accommodate him, and because I suddenly got a strong craving (antojo) for fish in salsa criolla.

Fortunately, I had all the ingredients in – aside from the fish, it’s a pantry dish, and double fortunately, Leandro loved it, so happy, happy! Triple fortunately, it can be adapted to chicken and shrimp too, so keep that in mind! I’m happy, hope you’re happy too…

I served it with spinach pasta, on the boy’s request…I definitely would have preferred polenta, but who has time for that at 1 p.m. with no lunch ready?

Filete de pescado entomatado (Fish filets in spicy creole sauce)

1 Tbs extra virgin olive oil

1 medium onion, chopped

3 cloves garlic, minced

½ Cup roasted red peppers (yellow or green are fine too!)

Pinch hot red pepper flakes, optional

8 oz can Spanish-style tomato sauce

8-10 pimiento-stuffed green olives, sliced

1 generous tsp capers, drained indifferently

½ -1 lb tilapia filets (or other flat whitefish)

Salt and pepper to taste

Heat olive oil in a large sauce pan at medium high until liquid and fragrant. Add onions, stir to coat, and lower heat to medium. After five minutes, add garlic and peppers and pepper flakes, if desired. Cook an additional 5 minutes, until vegetables are tender, then add tomato sauce, olives and capers and cook at a lively simmer for 10 minutes.

Meanwhile, lightly salt and pepper tilapia filets on both sides. When sauce has cooked until the oil is beginning to separate from the sauce, lay filets on the sauce without filets touching one another.

Cook for about 4 minutes, then turn filets carefully (they will fall apart if you are not careful) and cover with sauce, cooking another 4 minutes or so (check for doneness – opaque flesh – with a fork). The genius of this recipe is that the fish won’t dry out if overcooked!

Serve with rice or atop polenta.

Pasta al Tonno II (Black olive variation – freezeable!)

A while back I tried out a pasta with tuna recipe on my son. It had green olives and capers, as well, so we are not talking about subdued flavors off the kiddie menu. He loved it, because he is not a kiddie menu type of kid (except for the macaroni and cheese and those portions are anyway TOO SMALL) so I decided to try another variation (actually the one I first learned from Susana Villanova in Italy, way back when and still one of my favorites) AND an experiment.

I saved half the sauce to see if it would freeze well.

Add or subtract olives as you see fit!

Leandro thought it was great the first time and had seconds, plus lunch the next day! Two weeks later, I defrosted the second pint in the fridge and made it up for a dinner. Success! It was just as good, if not better, and I got a dinner and lunch out of it for the little guy.

Fast, cheap, and hearty! Easy too, except for trying to keep him from using his hands and then wiping them off on his clothes….This will be a new emergency staple (notice – all of these are pantry ingredients except maybe the onion – which is pretty much a pantry item around here!)

Good for boys and girls and grown-ups too!

Pasta al tonno II (with black olives)

1 lb of long flat thin pasta (I like fettucine, but linguine or thick spaghetti will work fine; half this if you are going to freeze half the sauce for later)

2 Tbs extra virgin olive oil

1 small to medium onion, chopped fine

28 oz can crushed or peeled and chopped tomatoes

6 oz can of light or white tuna (I use water packed, but you can use oil-packed if you drain. I do not drain the water-packed tuna)

20-30 pitted black olives, sliced

Teaspoon of dry oregano/parsley/basil or Tbs fresh (optional)

Salt to taste

Prepare pasta according to package directions. Drain and set aside.

Heat oil in a  medium pot on medium-high until fragrant. Add onions, stir to coat and lower heat to medium low. Allow to soften — about five minutes. Add tomato and bring to a simmer – about five minutes. Add tuna and olives, salt and herbs to taste and allow to cook for 5-10 minutes (15-20 if you have time). Mix into cooked pasta and serve.

If you plan to freeze half the sauce, put in a freezer-safe container. It will stay nice at least a couple of weeks.

Shrimp and Avocado Salad with Chipotle-Spiked Vinaigrette

I have been very, very busy these days with several projects (a culinary dictionary is one!), so deserved a grown-up meal made by my own loving hands. But it also had to be something not very involved that I could sling together fast, because  just don’t have enough time for everything I’d like to do!

Whether you are doing the Lenten fish on Friday thing or just happen to have some extra cooked shrimp from a buffet table or recipe, or just defrosted some shrimp that you didn’t get a chance to use and want to do something fun with (and that you have absolutely no intentions of sharing with your spoiled little son for whom you do too much anyway and whose leftovers you are sick of picking at instead of making something proper for yourself)….this is a very simple recipe that looks and tastes like a million bucks.

In an avocado shell or on a tostada...this salad looks as good as it tastes!

Shrimp and Avocado Salad Spiked with Chipotle Vinaigrette

(can be double or tripled or more to accommodate a crowd!)

Dressing:

3 Tbs olive oil

1 Tbs fresh lime juice

1 tsp chipotle in adobo – you can use the sauce and skip the peppers themselves, or include peppers, seeded and minced

Pinch salt

Salad

1 Cup cooked shrimp, cut into small chunks

1Tbs red onion, minced

10 grape tomatoes, quartered

1 ripe avocado, sliced in half. Scoop out flesh (discard stone) carefully and cut into small chunks. Reserve shells.

Salt to taste

Extra squeeze of lime to finish

Whisk dressing ingredients in a small bowl until incorporated.

Place shrimp, onion, and tomatoes in a medium bowl. Cover with dressing and stir gently. Then add avocado chunks and stir once again, very gently. Scoop salad into reserved avocado shells (or onto tostadas. Finish with lime and salt and serve.

Tuna Salad (With two secret ingredients)

As a sandwich filler or a salad topper, tuna is a star. Open the can, drain, and mix with a couple of staple condiments and you are good to go.

So, this is not a rocket-science post. But the way I make tuna salad is better than average. There are two reasons. One is a tip I learned in high school from one of my longtime besties — who is now Leandro’s godmother– and one is a secret of my own.

The first is ketchup, which cuts some of the fishiness with a bit of sweetness and zing. I got that one some after-school afternoon in the early days of MTV, when Marianne’s family had cable (an “A-ha” moment, for those of you who remember. Or it ” Buggles”  the mind to think about?) so we’d dash home to snack and watch the same three videos in endless loop…

The second secret is replacing half the mayo with nonfat plain yogurt which lightens it up and gives it a nice tang (I also do this with potato salad).

These days sustainabilty and food safety are big issues, so I don’t eat as much tuna as I used to (the sustainable kinds being comparatively expensive). But I’ll stray from cheap on this one and let you know I buy Wild Planet which is troll- and pole- fished and got a passing grade from Greenpeace rankings in Canada (I couldn’t find U.S. rankings). Wild Planet says it has more Omega-3s and less mercury that other brands; I choose to believe it, because that is the most convenient thing to do.

Tuna Salad (two servings)

5 oz. can tuna packed in water, drained

½  medium onion (white onion is very nice here), chopped fine

1 celery stalk, minced

1 Tbs mayonnaise

1 Tbs nonfat (or lowfat) plain yogurt

1 tsp prepared mustard

½ tsp ketchup (or to taste)

Salt and pepper to taste

(Additional optional ingredient suggestions – ½ tsp minced sundried tomatoes in oil, 1 small carrot, minced, hard-boiled egg chopped; ½  tsp tiny capers; 1 tsp minced olives; ½ tsp minced pickles)

Mix all ingredients in a bowl. Serve on salad or in sandwiches.

Shrimp in Seconds (tapas, party snack, salad topper or killer wrap/tortilla filler)

A bag of frozen shrimp in the fridge is worth its weight in gold when you have surprise guests, a hankering for seafood or you just want a tasty, quick, low-fat protein that you can eat with your fingers. It thaws in no time, cooks in less than no time, and is a virtually guaranteed crowd-pleaser. I also use any leftovers for lunch the next day!

This recipe is so basic it almost doesn’t seem like a recipe to me, but it gets the job done when you just want to eat without fussing and be able to sit down with your guests and actually eat and relax.

Casual Sauteed Shrimp (Appetizer or Salad Topper or Wrap Ingredient)

15-20 medium frozen shrimp (31-40 is fine and usually reasonably priced; pre-peeled is nice….).

1 tsp Old Bay Seasoning

1 Tbs extra virgin olive oil

Do a Quick Thaw McGraw on the shrimp in a bowl of room-temperature water, turning occasionally changing water if things are moving too slowly. Ten minutes is all you really need. Peel shrimp if necessary, leaving tails on.

Drain shrimp and pat dry with a paper towel and place in a bowl. Add Old Bay Seasoning and stir to coat.

Heat oil at medium high in a skillet. When oil is loose and fragrant, add shrimp and cook for about two minutes, stirring frequently until they are pink-white (not translucent) and curled up. You don’t want to overcook, so pull them out as soon as they begin to stiffen. You can cut through one experimentally to check that all translucence is gone.

Remove from heat and serve as finger food with plenty of napkins and cocktail sauce, lemon wedges or anything else you like to dip shrimp into. I have used them in wraps, cold out of the fridge and sliced in half lengthwise, along with fresh or roasted vegetables, white cheese or feta and a smear of hummus. You can also stir into pasta, adding a bit more oil and lemon.

Ensalada de Lentejas (Lentil Salad, Spanish-style)

The hot, hazy and humid summer weather typical of Long Island has started early this year, but that doesn’t mean I am giving up my lentils. I like the taste, the price and the fact that, unlike many of the other legumes, they don’t need pre-soaking.

Nutritionally these tiny almost-beans, almost-peas are giants. According to the Mayo Clinic’s Katherine Zeratsky, R.D., L.D., “…lentils are high in protein and fiber and low in fat, which makes them a healthy substitute for meat. They’re also packed with folate, iron, phosphorus, potassium and fiber.” So hip-rah, hip-rah! You should always, always, always have lentils in your pantry.

In winter I make hearty lentil soup, but hot weather calls for something cooler and lighter. I use a recipe — inspired once again by Penelope Casas’ The Foods and Wines of Spain. Have it as a main course with boiled potatoes or rice, or pair it with grilled sausages (from andouille to kielbasa..lentils love a good sausage partner). Lentils also marry well with grilled fish steaks; you can use the lentils as a bed, perhaps accompanied with polenta. This serves four as a side dish; you may want to double it for a BBQ accompaniment or main course.

Lentil Salad

½ lb uncooked pardina lentils (smaller and cuter than your average lentil, but you are free to substitute*)

1 onion, peeled. Cut in half, leaving one half whole and mincing the other half

1 clove

1 bay leaf

1 carrot scraped or peeled (scraping helps maintain a brighter color)

3 cloves garlic, peeled and smashed

1/8 tsp salt (a fat pinch)

Freshly ground pepper

¼ cup good olive oil

1.5 Tbs red wine vinegar

1 clove garlic, minced

 2 Tbs drained and minced roasted red pepper from a jar, plus 1 Tbs chopped for garnish

Rinse and pick through lentils and place in a large pot with enough cold water to cover. Stick the clove in the onion half (reserve the minced onion), then add to pot with bay leaf, carrot, smashed garlic, salt and pepper. Bring to a boil, cover and lower heat to a simmer and cook for 20-25 minutes, until just tender (longer if using regular green lentils). Drain and rinse well in cold water. Remove onion (and any clove that has fallen out), bay leaf and garlic. Dice carrot and place in serving bowl with lentils. Add olive oil, vinegar, reserved mined onion, chopped garlic and minced red pepper and mix gently (you don’t want the lentils to fall apart). Let rest for at least a half hour and serve, topped with reserved red pepper as garnish.

*Green lentils are great for salads because they keep their texture. Brown can get mushy and red lentils fall apart when cooked too long, If you choose them as substitutes, start checking the texture after 15 minutes of simmering.

Bacalao a la Vizcaribe (A classic cod dish reconstructed)

For all these years I thought I was making bacalao a la vizcaína (salt cod, biscayne or vizcayan style), when I was really making a sort-of bacalao guisado (stewed salt cod)! I only found out yesterday, as I started soaking the cod for another Lenten Friday of fish. “Let me see how Valldejuli and Cabanillas make it,” I thought, referring to two classic Puerto Rican cooks whose recipes I have lived by over the years.

I expected some inspiration for innovation, but what I got was comeuppance. I was so shocked by what I found that I checked Penelope Casas’ more Iberian, continental recipes for the dish. And it turns out that what I have been telling people is my “Bacalao a la vizcaína” is actually something else, but not quite.

So, I am a little embarrassed, but nevermind, my bacalao dish is really good and easier than pie. It makes my parents happy. And, apparently, it is my own. Thus, the silly name change.

I hope to try the real vizcaína later in Lent (it looks to be even easier than my version), but for now, this one is more than satisfactory and includes much of the same things: salt cod, onions, garlic, tomatoes, raisins, capers. It’s got salt, sweet and spice (if you like). It is rich without being heavy. This is a stew that goes well with rice, with potatoes (dressed with parsley and olive oil), with avocado and with hard-boiled eggs. It also goes well with Mark Kurlansky’s incredibly entertaining book Cod: A biography of the fish that changed the world which will enlighten you about why so many peoples in this world will go through the trouble of desalinating and cooking such a strong-tasting, strong-smelling fish. If you come from a seafaring nation, particularly bordering the Atlantic/in the Caribbean, it is part of you and you just can’t help it.

Bacalao al la vizcaribe

1-1.5 lbs salt cod, soaked overnight in cool water and then some more the next day, with at least two changes of water*

3 Tbs extra virgin olive oil

1 large onion, finely diced (yellow or big, fat, sweet are recommended)

1 green cooking pepper (cubanelle, Italian), finely diced

1 red pepper, finely diced (and a tsp of red pepper flakes, if you are so inclined)

4-5 cloves garlic, minced

1 24oz can peeled, diced or pureed tomatoes, chopped if necessary

¼ cup raisins

1 heaping Tbs capers, drained indifferently

15 green pimiento-stuffed olives, drained indifferently

Accompaniments: (choose one or more, mix and match) four hard-boiled eggs, sliced in half; avocado slices; boiled potatoes dressed with parsley and olive oil; rice; crusty bread toasted)

Heat olive oil in a pot on high and add onion. Stir to coat, then lower heat to medium and sauté until wilted. Add peppers and garlic and sauté another five minutes or more, until translucent.  Add the tomato and bring to a boil. Add cod (no need to break it up; it will fall apart in the cooking and stirring), raisins, capers and olives, lower heat and simmer (covered if it is not very liquid; uncovered if it seems very watery) for at least 20 minutes at a gentle bubble, stirring occasionally. Serve with you choice of accompaniments.

*Many people are afraid of salt cod or bacalao because of the salt. I find that an overnight soak with several changes of water does the trick. But if you forget to soak it the night before, boil a pot of water, drop the bacalao in for five minutes, drain and rinse thoroughly and you should be fine.   I actually add salt sometimes in the end!)

 

Tuna and Caper Salad (quick Lenten lunch)

A different take on tuna salad; zippy for lunch during Lent!

In a bit of a hurry to make my brown bag lunch, I banged together some tuna salad, but without mayonnaise (although a dab of mayo would go well too!). This is one of my favorites for a picnic lunch any time, but as a Catholic during Lent, when fish is de riguer for Fridays, this is a true friend. I usually have it on salad, but you can sandwich it, wrap it, stuff it in a pita, mound it on crackers…very flexible! If you have ripe avocado, slice it up and add it to whichever way you are serving the tuna. The cool blandness plays well with the tangy tuna.

Tuna and Caper Salad

1 5 oz can tuna (whichever you prefer; because I am a maniac, I buy sustainably-caught), drained

2 Tbs extra virgin olive oil

1 Tbs red wine vinegar

1/8 tsp your favorite prepared mustard

1 Tbs red onion, chopped fine

1 Tbs capers, drained

1 Tbs roasted red pepper (optional)

Whisk oil and vinegar together with a fork until blended. Stir in mustard. Pour over tuna, add red onion and mix well. Stir in capers and red pepper, if desired. Serve over green salad with chunks of avocado, or in sandwiches, with avocado slices.

A Fitting Finish to Fab Festivities

Kendra, Adriana and I go back to luscious and lively Puerto Rico days many years ago. Many miles separate us now, but we still manage a reunion a couple of times a year, tucking children into bed and drinking and talking long into the night, a night which gets progressively sillier with every glass of wine.

Children, however, are relentless and have no respect for a woman’s need to get some recuperative sleep after such festivities. 

There is only one solution and it has three parts.

One part is the remote control, which the children should have free rein of (even if it means hours of Scooby-Doo, the Care Bears and whatever else they choose to be hypnotized by).

The second is mimosas – one part orange juice to 3 parts prosecco (Italian bubbly that is softer on tongue and wallet than champagne, which shouldn’t really be wasted on fruit drinks anyway) and some ice (it’s gotta be refreshing, after all). Forget using champagne flutes; you are going to need more than a thimble-ful to reset your buttons.

The third part of the solution is some kind of decadent breakfast. You might be bleary-eyed, wearing sweats and feeling hellish, but you need to carry over the glamour of the previous evening, when for a few hours at least, you were once again a fetching and feckless babe with nothing better to do than have sparkling conversation with equally fab friends until the wee hours.

Thus, Adriana’s solution: blinis topped with scrambled eggs, salmon roe and – O.M.G. creme fraiche. No, it’s not cheap, but it is very hot and super easy!

Blinis topped with scrambled eggs, salmon caviar and crème fraiche

5 – 6 eggs

4 oz crème fraiche

1 Tbs light cooking oil or fat for scrambling

Several teaspoons salmon caviar (use a plastic or wooden spoon to scoop it as metal changes the taste)

Packet blinis

1 tsp chopped dill

Warm the blinis (as many as you think you need; we did six for two people) either by heating the ungreased skillet or in a toaster oven. Scramble the eggs lightly, folding in a teaspoon of the crème fraiche. Salt isn’t really necessary, considering the saltiness of the roe, but that’s up to you.

Heat the oil in a skillet and cook the eggs gently, swirling and moving with a spatula until cooked through.

On nice looking plates, place the blinis, pile eggs on each, followed by a dollop of crème fraiche and a half tsp of  salmon roe. Sprinkle with dill and serve, with prosecco or prosecco mimosas.
