Lemon Thyme Roast Chicken (Third Bird from Hardscrabble pastured chicken project!)

Trisha Hardgrove’s pastured chicken project at Restoration Farm is a complete success as far as we in the de Cuba Romero household are concerned. These birds are so beautiful to work with, so wonderfully textured, so flavorful, that they almost cook themselves. Going back to conventional factory-raised chicken is pretty much out of the question now, but even organic supermarket chicken cannot compare.

Having said that, we can all use a little enhancement to highlight our best features, and this simple roasting recipe, inspired by The Barefoot Contessa, is just the thing. The result was a juicy, tender bird and juicy, tender vegetables, infused with — but not overwhelmed by — lemon, thyme and garlic.

The original recipe called for the bird to be slathered with butter, but here we prefer olive oil. Mind you, we did NOT get a crispy skin, which may be what you are looking for. In that case, substitute same amount of melted butter. She also uses a fennel bulb where we use celery – again, just personal preference. This was a meal my dad, Pedro, and I did together – it is thanks to him that we were fearless with the salt. You really do want that much. We did not, however, put any additional salt on the vegetables and they didn’t need it. You can always finish them with salt at table.

The amount of thyme may seem a lot, but it really flavors the chicken and the vegetables. I am fortunate to have a bumper crop of French thyme in my container herb garden, so it was no problem for us. If you are buying at the store, you will want the equivalent of two fat fistfuls of sprigs for the whole recipe.

Lemon-Thyme Roast Chicken and Vegetables

1 4-5 lb roasting chicken

2 Tbs kosher salt, plus 1 tsp

1 tsp freshly ground black pepper, plus several pinches

1 large bunch fresh thyme, plus 20 sprigs

1 lemon, rinsed and sliced in half

1 head of garlic, unpeeled, but root end sliced off as much as you can. Slice the head in half, crosswise (through the cloves)

2 Tbs olive oil

1-1.5 cups onion, sliced thick (yellow, red or a mix of the two is fine)

2 Cups carrots, chopped into 1.5”chunks

1 Cup chopped celery

1-2 Cups additional chopped roasting vegetables of your choice – potatoes, turnips, parsnips, fennel for example

2 Tbs olive oil

Preheat oven to 425°F. Remove chicken giblets. Rinse the chicken inside and out, remove excess fat and pin feathers and pat dry.

Use the 2 Tbs salt and 1 Tbs pepper to salt and pepper the inside of the bird, then stuff the cavity with the thyme, lemon and garlic.

Brush the outside of the chicken with 2 Tbs olive oil and sprinkle with the remaining salt and pepper. Tie the legs together with kitchen string and tuck the wings under the body. Place the onions, carrots and celery in the roasting pan and toss with the remaining olive oil and 20 sprigs of thyme. Place the chicken, breast side up, on top of the vegetables.

Roast the chicken for 1.5 hours (to an internal temperature of 165° or until the juices run clear when you stick a knife between leg and thigh and the joints move freely in the sockets). Remove chicken and vegetables from roasting pan, arrange on a platter and let rest under a loose foil cover for 20 minutes before serving.

In the spirit of efficacy and energy-efficiency, we simultaneously roasted beets for a future salad and oven-fried potatoes (recipe to come). For the beets, simply cut off beet greens to an inch above the beet, wash and dry, wrap loosely in foil and stick in the oven with the bird. The beets will be done when the chicken is done. You can easily peel them and serve them with the chicken, or save them for something else in the next day or two.

Pollo Borracho (Drunken Chicken)

Usually when I have several pounds of organic boneless chicken thighs from Costco, I make pollo guisado (Latin stewed chicken) and eat some now, freeze some for later in pint containers. Very convenient and beloved by all (must be the beer and wine that go into it?  https://hotcheapeasy.wordpress.com/2010/12/17/abuelitas-stew-comes-through-%C2%A1un-guiso/)

But I just didn’t feel like it. At. All. No, no, no.

So instead, I made about three pounds worth of Pollo Borracho or Drunken Chicken, so called because it incorporates whatever the local hooch is in your part of Latin America. In the following version, adapted from Memories of a Cuban Kitchen by Mary Urrutia Randelman and Joan Schwartz (1992 Wiley Publishing),  the booze is white or light rum (I used Don Q Cristal, a Puerto Rican white rum, which is — by the way — the only acceptable rum for a Cuba Libre).

This recipe does take a long time to simmer, but the active part is very minimal and very basic. The texture is beautiful; it starts to shred of its own accord (I’m thinking quick black bean and chicken quesadillas…). Best of all, Leandro called me the best cook in the world after trying it (which means it is safe to pack the leftovers for his lunch tomorrow. Hurray!). I will experiment with freezing some for future reference!

Pollo Borracho

3 lbs skinless, boneless chicken thighs (you may use pretty much any chicken parts. Bone-in is fine, but do remove the skin)

¼-1/2 tsp salt

¼-1/2 tsp oregano

Black pepper to taste

4 Tbs extra virgin olive oil

3 cloves garlic, minced

1 large onion, peeled and sliced thick

1 bay leaf

¼ Cup dry white wine

¼ Cup light or white rum

¾ Cup pimiento-stuffed green olives (about 20) drained

Wash the chicken and pat dry, then season with salt, oregano and pepper. Heat olive oil at medium high (in a large skillet that can accommodate all the chicken and that you can cover) until fragrant and then brown the chicken thoroughly on all sides. Remove chicken and reserve.

Lower the heat to medium low. Put onions and garlic in the skillet and sauté until wilted. Add bay leaf, wine, rum and olives. Stir to incorporate, then add chicken pieces, stir, cover and cook on low for 45 -60 minutes. If your skillet is oven-proof, you can cook it in a 350°F oven for 45 minutes instead. Remove the bay leaf and serve with white or yellow Latin rice.

Rosemary and Lemon Roasted Chicken (love it hot or cold)

Things in the kitchen are speeding up for me as I return to teaching, Leandro returns to daycare, and the summer harvest continues to be really bountiful. Ironically, almost everyone I know who would usually help me prepare/eat all this food has been away, including Allison, with whom my family splits our farm share.

So I’ve been going nuts trying to cook or preserve it all while also gearing up for the new semester. Yeah, I am overwhelmed.

But, I am also compelled to share recipes and this one is a goodie – a simple yet sophisticated roast chicken (I am very fond of roast chicken) that comes out subtle and juicy and really showed off the fine qualities of the pastured chickens Trisha Hardgrove has been producing at Restoration Farm. The texture and grain of these birds is far superior to anything I’ve had from a supermarket or specialty store (including expensive organic or “natural” birds). They even look cleaner and healthier that a commercial bird when plucked and when I am cutting into them.

Since I believe in packing the oven whenever possible, I made Slow-Roasted Cherry Tiny Tomatoes https://hotcheapeasy.wordpress.com/2011/08/03/slow-roasted-grape-tomatoes-for-pasta-bruschetta-or-sandwiches/at the same time. This dish would also be very fine with string beans (now at distribution at our CSA) or roasted summer squash (abundant right now).

I made this ahead of Hurricane Irene and brought the chicken and tomatoes over to the kind neighbors who had us sleep over their house on the night the storm hit (I got spooked by the banging on the roof). It made a terrific cold lunch when the power was out. Hot or cold, roast chicken brings comfort.

Rosemary and Lemon Roasted Chicken

1 roasting chicken (4-5 lbs), giblets removed

Olive oil for rubbing

4 cloves garlic, minced into a tsp coarse salt

Juice of two juicy lemons (Meyer lemons are recommended, but if you haven’t got, be prepared to add ½ tsp sugar or a tsp of orange juice to the rub), squeezed lemons reserved

¼ Cup coarsely chopped fresh rosemary leaves (may add another ¼ Cup fresh, or supplement with a smaller amount of dried rosemary) plus 8 rosemary sprigs

¼ tsp cayenne pepper

Coarse salt

Preheat oven to 375°F and place rack in the center. Rinse and dry the chicken with paper towels, trimming and discarding extra fat.

Place chicken breast side down on roasting pan (you may also use roasting rack to good effect) and rub the oil and half the garlic onto the skin. Pour half the lemon juice on the back (along with sugar or orange juice), as well as half the chopped rosemary and half the cayenne.

Turn the chicken over and gently separate the skin from the breast, leaving skin on. Insert on rosemary sprig on each side. Then repeat the rub with more oil and the remaining garlic, lemon juice, rosemary and cayenne. Sprinkle on additional coarse salt to taste.

Tuck a rosemary sprig under each wing and the remaining four sprigs in the cavity with the squeezed-out lemons.

Bake the chicken, breast side up, basting once or twice, until an instant-read thermometer inserted in the thickest part of the thigh (without touching bone) registers 170°F (1 to 1.5 hours).

Before serving, let the chicken rest, covered loosely with aluminum foil, for 20 minutes.

Tandoori-Style Roasted Chicken (great hot or cold!)

We picked up another pastured bird from our share at Restoration Farm this week, which reminded me how delicious the last one turned out.

While I decide what to do with this one (as Hurricane Irene churns her diabolical way up the Eastern Seaboard in our direction and I am checking batteries, gathering candles and surveying our canned goods), let me share this easy and extremely tasty recipe that tasted great right out of the oven, but also made for an excellent quick-grab out of the fridge in the following days, re-heated as well as cold!

This tandoori-style chicken was a recipe for whole chicken that Leandro picked out from a magazine (EveryDay Food, from Martha Stewart). He thought the picture looked very tasty and we had everything we needed in the house, except maybe the ginger. Since I am encouraging him to start eating chicken off the bone, letting him select the recipe worked out very well. I just tweaked the original to our tastes (more garlic, more spice) and it was smooth sailing!

Tandoori-style oven-roasted chicken

1 whole chicken (4-4.5 lbs), rinsed, patted dry and quartered (skin on)

1 cup plain non- or low-fat yogurt

½ yellow onion, roughly chopped

2-inch piece ginger, peeled (with vegetable peeler) and sliced

3 garlic cloves, peeled

3 Tbs fresh lemon juice

1 tsp ground cumin

1 – 1.5 tsp ground coriander

1 Tbs vegetable oil

Coarse salt and ground pepper

Place chicken pieces in a gallon-size zip-top bag. In a blender or food processor, blend all other ingredients until smooth and pour into bag. Seal and shake and refrigerate (4 hours to overnight).

Preheat oven to 500°F. Place a wire rack in a foil-lined baking sheet with sides. Place chicken parts on rack, skin side down, seasoning generously with salt and pepper. Roast until begins to char and flip for a total of about 35 minutes. Reduce heat to 450°F and roast until chicken is cooked through, 8-10 more minutes (insert meat thermometer into thickest part of thigh to check). Allow to rest 5 minutes before serving.

Cool Off with Cold Chicken Chinois

The hot weather begs for cold chicken that you can really get your hands into.

This is yet another New York Times-inspired recipe for which I happened to have some — but not all – of the ingredients on hand so I had to adapt. I very much liked the Asian inflections in the chicken, but what I noticed most was how moist and tender the chicken stayed and how well it absorbed the flavors with the long, slow simmer. I will be trying the same technique with different seasonings in the cooking liquid in the very near future. In the meantime, do try the wrap idea at the bottom; we took it to the pool for a light evening meal and it was just the thing.

I simmered this one at night when the temperature had dropped, since it was going into the fridge for the next day anyway! Link to the original NYT article at the bottom!

Chilly Chicken Chinois

(factor in overnight refrigeration)

1 lb. boneless chicken thighs

Salt and pepper

1 two-inch piece of ginger, peeled and sliced thick

4 cloves garlic, peeled and sliced

1 star anise

2 scallions

Season the thighs generously with salt and pepper. Place in a heavy pot and add enough cold water to cover. Add the ginger, garlic, star anise and scallions. Bring to a gentle boil, scooping out any foam. Turn heat to very low, cover and simmer ever so gently for an hour.

Transfer the thighs to a bowl to cool. Skim the fat off the surface of the remaining liquid. Reduce the liquid by half over high heat (5-10 minutes), then strain it over the thighs. Cover and refrigerate overnight.

Serving suggestions: Sprinkle with cilantro, slivered scallions and sesame oil. Or….

Quick chicken wrap ideas

Spread a wrap or your choice with mayonnaise. Add cucumber, sliced lengthwise, pieces of chicken, slivered scallions and cilantro. Add a sprinkle of lime/sesame oil and a drizzling of Asian Stir Fry Sauce https://hotcheapeasy.wordpress.com/?s=asian+stir+fry+sauce roll up and serve.

You can do the same by substituting hummus and roasted vegetables for the mayo, stir-fry sauce and cucumber.

De-Friended by a Vegetarian!?! (plus: new poll on your food choices!)

A vegetarian recently de-friended me on Facebook. She was unhappy with my posts on the pastured chickens at Restoration Farm and found them too painful, so she apologized (sort of) and pulled the plug.

I wasn’t particularly offended — to each his/her own — but it got me thinking about the food choices my readers make. So out of curiosity, I put together this quick poll. Please let me know what you will and won’t eat. I welcome comments on why as well!

I, in case you haven’t noticed, am an omnivore, but I try to limit my meat, fish and poultry consumption to organic/sustainably harvested products.

Asopao de pollo (Soupy Chicken and Rice) with Pastured Bird!

Sooooo, I managed to get to Restoration Farm in time to see the very tail end of the first processing (meaning when the birds are killed, plucked and eviscerated, lest I be accused of euphemism).

I did NOT take Leandro; I wanted to see things for myself and not have to focus on keeping him out of trouble. More on his reaction to the chicken in a moment.

First I want to say that the atmosphere at this first round of chicken processing was so calm and cooperative and lovely. The team of Trisha, Lucille, Steve, Brian, Denis, Dan and Caroline was tired, but elated, but not  giddy or punchy, after seven hours of chicken guts under the trees. Dan and Caroline’s two kids were there; two-year-old Ada was calm as could be in the face of all the activity.

My first bird

The chickens — all 35 made it to processing! – weighed in between 4. 16 and 6.65 lbs. As a note, these are not certified organic birds (that’s a whole ‘nother process), but they have been raised according to organic practices – from their feed to their pasture; they just don’t have the stamp.

I also forgot my bloody camera! I wanted to shoot myself (since I couldn’t shoot pictures). So you will have to wait and see whether someone is able to send me photos; then again, perhaps you don’t care to see the goings on. Anyhoo, it was clean and well-organized.

So I brought home bird #22, weighing 5.75 lbs. I picked up the necessary ingredients for asopao from the Compare (Latino) supermarket in Farmingdale on the way home. My dad, Pedro, roused himself from the NYTimes crossword puzzle to separate the bird (we saved the breasts for another meal cause this bird was so big!) and I went to work while Leandro was still across the street at a playdate. It was beautiful to work with. So clean.

Asopao isn’t really Hot, Cheap & Easy, except for the hot, sweaty work if you want to do it right (and I did). Perhaps I will invent a shortcut version one day, but not with this special bird. And really, my mom and dad were taken back to the days of my great-aunts cooking all day long…I really got it right. The chicken gave so much real flavor; it is certainly not as tender as factory-farmed, but it is really good. In the next few posts I’ll talk about some of the more unusual ingredients here and what to do if you can’t find them.

Leandro sat down to eat and said, “These are the little chickens that got big?”

and I said “Yes, Trisha and everyone killed them today so we could eat.”

“Oh. You went to see?” he said, and I said yes.

He stuck a big bite in his mouth and said, “Delicious.”

I forgot to tell him not to speak with his mouth full.

Asopao de Pollo (Soupy Chicken and Rice) Serves 6-8

Dedicated to my tía-abuelas

A – Three pounds chicken (may be whole chicken or, if you have a big bird, reserve the breasts for another meal. MUST HAVE BONES!!! Should have neck, heart and liver as well) cleaned and separated into drumsticks, thighs, wings (separated and tips cut off and reserved for stock), backbone, etc.

B – ADOBO (pound all ingredients in B in a mortar and pestle into a smooth paste)

  1. 3 cloves garlic, peeled
  2. 2 black peppercorns
  3. 1 tsp dry oregano
  4. 2.5 tsp salt
  5. 1 pinch (1/8 tsp) turmeric or sweet paprika (Turmeric stains, so beware!)
  6. 1.5 tsp olive oil
  7. ½ tsp vinegar

C – 2 Cups white rice (less if you want soupier soup.Sometimes the rice takes over.)

D – 9 Cups water and 1 Tbs salt

E – SOFRITO 1

  1. 3 Tbs olive oil
  2. 3 oz ham steak or jamón para cocinar, diced
  3. 1 oz bacon, chopped rustically
  4. 1 green cooking pepper (cubanelle or Italian pepper), diced
  5. 1 large onion, peeled and diced
  6. 6 culantro leaves (recao), minced
  7. 4 sweet small peppers called ají dulce in Hispanic markets (do NOT purchase Jamaican ají or scotch bonnet! They look the same but the Jamaican/scotch bonnet are HABANEROS, deadly hot and inappropriate for this dish!) seeded and minced
  8. ½ Cup cilantro leaves, minced
  9. 2 Tbs vegetable oil (seasoned with achiote, for the more expert criollo cook)

F – SOFRITO 2

  1. 1 Tbs capers, drained indifferently
  2. 1 tomato, seeded and diced
  3. 1  8 oz can Spanish-style tomato sauce
  4. 4 oz roasted red pepper, drained indifferently and diced
  5. 10 pimiento stuffed green olives
  6. 4 oz Spanish dry, cured chorizo sausage

G – ½ Cup light red wine

H –  OPTIONAL – in Puerto Rico we decorate and cool off the soup by topping with a can of petit pois or asparagus. Today’s foodies are not so hip to those particular vegetables in their mushy canned form. I leave it up to you.

Instructions

  1. Separate chicken parts into two large bowls. The back bone, neck, wingtips, liver, heart, and kidneys go in one for the stock. The meatier drumsticks, wings, thighs, and breasts (if using) go in the other. I remove most of the skin and cut off much of the fat. Season all pieces with the ingredients in B. (Adobo).
  2. Soak the rice in abundant water while doing the rest of the prep and cooking.
  3. Place the ingredients in D in a large (6 qt) saucepan. Add the stock chicken pieces, cover, bring to a boil at medium high, boil for 15 minutes, then reduce heat and simmer for an additional 30 minutes, covered.
  4. In an even larger pot, place all the ingredients in E (Sofrito 1), and sauté at medium high until vegetables begin to wilt. Add all the ingredients in F (Sofrito 2) and continue stirring until combined and beginning to stick. Add wine and scrape bottom of pot. Add the meaty chicken pieces and cook at medium, turning frequently to coat well. Cover and cook for 30 minutes on medium low.
  5. When the stock and chicken sofrito are ready, drain stock into chicken. From the stock, reserve the back and wings and get as much meat off them as you can, adding to the soup, discarding the bones. You may add heart and liver to the soup as well.
  6. Bring to a boil.
  7. Drain the rice, stir into the soup, cover and bring to a boil. Reduce heat and cook, covered until rice is cooked (start checking in 10-15 minutes). Serve with roasted red pepper, peas or asparagus garnish. If the rice takes over, just add water.

What Produce to Buy Organic (and Chicken Update)

If, like me, you are concerned about chemicals in  food, but don’t have the cash to buy all organic, you need to look at the Environmental Working Group’s Shopper’s Guide to Pesticides in Produce (http://www.ewg.org/foodnews/summary/). The 2011 guide has just been posted. It includes a short list of the Dirty Dozen most pesticide laden produce (so you should buy them organic) and The Clean 15 (15 fruits and vegetables that are conventionally grown yet low in pesticides). You can print out a small version to carry in your wallet!

And on chickens: Tomorrow is processing day for the first round of Trisha’s pastured chicken project at Restoration Farm. Dan and his merry band of volunteers and assistants were busy with the tractors, clearing space for the processing, while Trisha went over each step she’ll take in the processing of more than 30 birds. Very exciting stuff; I will try to witness some of it tomorrow, but will draw the line at having Leandro there, at least this time! I want to watch the process, not have to mind him!

Shout out to the folks from Whole Foods who had a team building thing at the farm today and in the process cleared out the weeds that were choking the asparagus beds!

One Week to Our First Pastured Chicken: Final Selection of Recipe Has Begun!

Just before this week’s visit to Restoration Farm, we went out into our yard where Leandro picked the very first pea pod from a plant he himself started from seed! We were very pleased, even though the peas weren’t so tasty raw. This was a random variety from a garden show craft, so we have high hopes for the others we planted – Burpees Garden Sweet (organic). His eyes reflected the magic of a seed transforming into food.

Then at Restoration Farm, we visited that other transformation into food; Trisha tells us that the pastured chickens are a week away from our cooking pots. They will be seven weeks and one day, and — we hope — about five pounds. She had initially planned to go to eight weeks, but due to the window of opportunity for processing and the fact that they are getting slower and heavier and more prone to disease, she figures next week is it!

Ignorance is bliss

 

Leandro still finds the chickens stinky (and really, they are pretty pungent at this point) and was more interested in drawing sweet beads of nectar out of the honeysuckle blossoms that are exhaling seductive breaths of fragrance all over the farm these days. He learned the art of drawing out the style from Farmer Steve and then taught me! Delicious.

So now I am planning what to do with my first bird. As I expect it to be less fatty and moist than a factory bird or even an organic chicken from a large facility, I am thinking about dishes that will help contain the moisture and make the most of the added flavor that a slightly more muscular bird will have. I also want to do something that is already in Leandro’s growing list of delectable foods, so as not to risk some refusal. And then there is the desire to honor my Caribbean forebears who lived off the land (some still do, at least in part).

So… I’ve got two ideal candidates from the criollo* canon: arroz con pollo: chicken and rice,or asopao de pollo: soupy chicken and rice. Feel free to share your thoughts and opinions on which one it should be!

*Criollo or Creole refers to the generations of colonialists actually born in the colonized place. In the case of Puerto Rico, the Spanish were the first Europeans to settle. They remained Spaniards, but their offspring born on the island (in many cases, half European and half native) were known as criollos – not quite European, but not quite native, either. Criollo cooking (like Creole in New Orleans, for example), reflects the meeting of different worlds of cooking ingredients and techniques.

Finger food supreme

One day I will be an eater of sandwiches.

But for now aside from the odd grilled cheese, I am not a sandwich girl. Just don’t like all the bread, the sliced deli meats, cold salads inside…I just don’t get it. Unless of course it is a pressed Cuban sandwich, con todos los poderes, de Elegguá pa’bajo…you know, like real bread, toasted, mad quantities of stuff, greased up…I can do that. In Miami. Or San Juan de Puerto Rico (ah, Kasalta). Occasionally.

But not being a sandwich person in this American life is to miss out on a lot of convenience and portability. So, I have discovered the quesadilla. Take whatever you’ve got in the fridge, spread it over half of a tortilla toasting in a skillet, sprinkle melty cheese, fold it, flip it, and allí está…a sandwich worth eating. Slice it like a pizza and you can dip it into hot sauce too.

It worked very well on our camping trip. Leftover black beans, some Monterrey Jack and sriracha and go, baby, go. Other things I have stuffed into quesadillas include pollo guisado; cheddar cheese and tomato slices; leftover sliced steak; roasted vegetables; sundried tomato and smoked mozzarella…all awesome and all done in no time, sealed with a kiss of cheese. You can slip avocado in the middle where it won’t get hot to give a lovely creaminess (plus health benefits, I am sure, but who cares?)

Quesadillas (with your choice of stuffing)

1 package of large soft tortillas (flour or corn)

a spritz of cooking oil on a good iron skillet or nonstick

1-2 cups filling (LEFTOVERS! cooked beans, cooked veg, stewed meat, sliced cooked meat)

couple of fistfuls shredded meltable cheese

1-2 Tbs herbs/hot red pepper flakes/salsa – it’s up to you to make the matches

Heat the skillet and the oil to medium. Lay a tortilla on it. Cover half with filling (Not too thick! Maybe 1/4 inch – you don’t want a mess). Sprinkle cheese (especially around the edge to make a seal). Fold the empty tortilla half over. Allow to cook a minute, then flip with fingers if you are daring, or a spatula. Turn a few times until a bit crispy and transfer to a plate. Start again with another tortilla. You can slice into wedges and serve with whatever condiments go with your filling.
