Passionfruit Chipotle Shrimp: quickie dinner with style and flair

My friend, Ashley was visiting and I had promised dinner, but I hadn’t really planned. Towards the end of a busy semester, I find myself playing it by ear a lot; I just don’t have the wherewithal to do something that requires a lot of prep or advanced thought. I deal with things as they come up, and look forward to the upcoming break when I won’t feel so much like I am flying by the seat of my pants (what an odd idiom that is)!

I knew I had a bag of shrimp in the freezer that had been waiting for me to come up with something and then I remembered a quickie solution I quite like: tangy, smoky shrimp with finger-licking good sauce that soaks nicely into rice, but can also be eaten on its own if you are looking to reduce carbohydrate intake.

This was done in under ten minutes and made us very happy. One thing I like about this light treatment of shrimp is that you can eat a lot of it without the uncomfortably full feeling you can get from pork or beef). For a grilled version, click here.

Passionfruit Chipotle Shrimp (serves four)

1 Tbs extra virgin olive oil

1 small onion, minced (about a half cup)

2 tsp minced garlic

3 Tbs passionfruit pulp or juice

1-2 Tbs chipotle in adobo, chopped (remove seeds for less heat, but this amount is not super-spicy)

Juice of one orange or Clementine

Sprinkling of Adobo powder

1 lb. medium shrimp, peeled and de-veined (tail-on is okay)

1/4 Cup cilantro, chopped

In a skillet, heat olive oil until fragrant then add onions, stir to coat and lower heat to medium. Saute for five minutes or until onions are quite soft. Add garlic and cook for another minute. Add passionfruit, chipotle and juice and stir to combine. While it cooks for a minute or two, sprinkle shrimp with Adobo (go easy if you don’t like much salt). Raise heat to high, add shrimp and cilantro to skillet, stir to coat and cook for 3-4 minutes, depending on the size of the shrimp, until they lose their translucency and begin to curl.

Serve over rice. Good cold too!

Easy Black Bean, Corn and Scallion Fritters

Here was a nifty little trick to use up some bits and bobs…black beans from a batch I had soaked, some frozen corn, a couple of leftover scallions. I went light on the seasonings, but you can certainly go more heavy.

These were a big success at my house on a night that everyone just wanted something casual that you could grab with a napkin and keep going. You’ll have to play around with the consistency…add more water if you want a lighter fritter, less if you want it dense (which will need more cooking time in order to cook that flour).

Black Bean and Corn Fritters With Scallions

1 tsp coriander seeds

½ tsp salt

5 black pepper corns

1 Cup black beans (either from a can or soaked)

1 Cup corn kernels

Half an onion, minced (at least ½ Cup)

½  Cup scallions, sliced, green and white parts

2 eggs

2 Tbs cilantro

¾ Cup flour

Water

2 Tbs vegetable oil (or more) for frying

Grind coriander, salt and peppercorns in a mortar and pestle until pulverized.

In a large skillet, heat  oil at medium-high. Meanwhile, in a large bowl, mix beans, corn, onion, scallions, eggs, cilantro and flour until blended. Add water to create a more liquidy batter that drips thickly off a spoon.

Drop large tablespoonfuls of batter into the hot oil and smooth out a bit into fritters. Don’t crowd them and cook about 3-4 minutes on each side, depending on thickness, adjusting temperature as needed. Place cooked fritters on paper towels to cool while you start the next batch and continue until done. Makes about a dozen fritters.

You don’t need a wedding invitation to tuck into this soup, quite possibly the best Marianne and I have ever made on our Sunday night cooking projects. And that’s saying something, as we have made some kicking soups (escarole and lentil in particular). Regular readers know that my friend Marianne and I like to cook big on Sundays, not to eat at the moment, but to pack up for weekday work lunches. We couldn’t agree on what to make — she wanted white chili and I wanted minestrone — but the fact that I had a bunch of chopped meat and both I and her husband, Ted, had rich turkey stock from our respective Thanksgiving roasts decided it for us.

The stock is everything in a good soup, which is why I try to always have some homemade stuff on hand. Please, please, please…next time you roast a bird (or get a rotisserie chicken from the supermarket), simmer those bones with some onion, garlic (unpeeled), herbs, maybe a carrot or a stalk of celery, and a few peppercorns for a couple of hours and strain yourself some stock (freezes well). The commercial stuff is too salty and just can’t hold a candle to the real thing.

Italian wedding soup , as far as I can determine, is an Italian-American favorite, based perhaps on a minestra maritata that dates back to Spanish-controlled parts of Italy (Lazio and Campania) and Toledo. The maritata part refers to how well the flavors marry together, not how the soup will fortify newlyweds for the tasks at hand.

Rich, Hearty and Creamy Turkey and Mushroom Soup (dairy-free leftover solution!)

A 13-lb turkey is really too much for four people, but that’s what we got from the farm and of course we are going to use and enjoy every last bit! Over the weekend I posted on how to make delicious stock from the carcass of your roast. Now, here’s how to incorporate that stock with the leftover meat and loads of mushrooms to make a creamy soup that you won’t believe has no cream or butter!

The instructions are kind of longer than my usual, as normally for soup I would just sauté the basic veggies a bit, bung the rest in and leave it to simmer away. But the added steps of sauteing the vegetables separately and then making a roux (a cooked up paste of fat and flour) adds a creamy silkiness that makes this a bit more special. Don’t be afraid to try it…I have separated everything into easy steps that I believe will be easy to follow!

I found some of my inspiration from Kalyn’s Kitchen Turkey Mushroom and Wild Rice recipe, so thanks Kalyn for the idea of a roux.

Dairy-free Creamy Turkey and Mushroom Soup

2 Cups leftover roast turkey meat

1 quart turkey stock (or whatever you have on hand), plus more water to cover

2 tsp fresh thyme leaves or one teaspoon dry (not powdered)

Handful garlic scapes or two cloves chopped garlic

1 Tbs olive oil

½ Cup chopped carrot

½ Cup chopped onion

½ Cup chopped celery

½ Tbs olive oil

20 oz chopped fresh mushrooms (white button, baby bella – no dried)

1.5 Tbs olive oil

3 Tbs flour

Salt and pepper

Step One: Place turkey, stock, thyme and garlic scapes in a big pot and bring to a boil. Then reduce heat and simmer.

Step Two: In a separate skillet, heat the olive oil until loose and fragrant, then sauté carrot, onion and celery at medium low until translucent and browning. Add vegetables to stock mixture and return the skillet to the heat, adding additional ½ Tbs olive oil.

Step Three: Add mushrooms to the skillet and sauté until they begin to soften, brown and release their juices. Add the mushrooms to the soup pot along with an additional two cups of water and return the skillet to the heat source, raising heat to medium high.

Step Four: Add the remaining oil to the skillet and add the 3 Tbs of flour, whisking to combine. Lower heat to medium and cook the roux a bit until relatively smooth and colored (you want to cook the floury taste out of it). Then add two cups of the turkey soup liquid to the skillet and whisk briskly until smooth and beginning to thicken.  Pour the thickening liquid back into the pot of soup and stir well.

Salt and pepper to taste and serve over rice or barley (you can throw cooked rice or barley directly into the soup and heat through, if desired) or on its own. Makes about 1.5 quarts.

My friend Marianne and I cook together most Sundays, putting together at least one big dish that we can pack for lunch a few days of the following week. My lentil soup is a regular feature of Sunday night cooking, as are roasted vegetables, But a glorious head of escarole at a recent end-of-season Restoration Farm pick-up proved inspiring and nostalgic.

For Marianne it was all about her Italian nana who Marianne swears made this soup out of a handful of leaves, a pinch of ground beef and water. Grandmothers from those days were like that…they somehow conjured the most memorable, intoxicating flavors out of thin air like fairy godmothers.

Me, I need a good stock to help me out. Especially because my own abuela never made anything like this that I can remember, so I don’t know where I first had escarole soup, or why it provokes such sighs of nostalgia in me, or how I knew that mine has to have white beans, even though Nana Manone doesn’t seem to have included them in hers. And I wasn’t planning on meatballs, but since Nana used them….(which might explain the water instead of stock) Marianne’s big brother Peter will have to shed some light on this one, if he remembers.

In the meantime, I defrosted my prize homemade chicken stock in the fridge and softened the beans and grudgingly defrosted some raw but seasoned ground beef and prepared myself for battle. Continue reading

Summer Tomato Recipe (or just chop fresh tomatoes over warm pasta and you’re done!)

We won’t be eating this light and fresh summer way much longer.

The little man and I pulled out the tomato plants today. They could have stayed in a bit longer and we might have had a few more vine-ripened tomatoes, but he took off all the little greenies (“39, Mom! I picked 39 tomatoes!”), holding up his shirt hem to make an impromptu bag for them, while I folded the netting (okay, attempted to fold the netting and then just balled it all up because it was making me crazy) and then he pulled out all the plants (about ten) I threw them in the leaf compost and we called it an afternoon. After a summer of garden disasters, the pounds and pounds of tomatoes we got from our ten plants was a true joy. And I have several quarts of sauce and puree in the freezer for later!

My dad (he of the crazy-ass mostly vegan diet) just had surgery for bladder cancer last week, so we’ve been very, very busy with other things, not least of which is preparing food for everyone so that we all continue to eat well and keep up our strength while we work on his recuperation and everything else (like work — fullltime and freelance — and school and soccer and violin — and on and on). So yes, the healing and kitchen are going great guns, but the writing is not.

So this is not even a recipe, but a solution. Boil pasta in generously salted water and drain, reserving 1/4 Cup of pasta water.. Chop up fresh tomatoes and toss them into the pasta with a splash of olive oil, a splash of pasta water, a couple of basil leaves if you’ve got and maybe some finely minced garlic. Serve with grated cheese/a sprinkle of salt, Or not. Eat. Move on to the next thing and try not to mourn the end of the summer tomatoes. Save your seeds and plant more next year!

Finally! A Quicky and Easy Falafel Recipe Worth Sharing!

Falafel is one of my favorite dishes in the world. These fried Mediterranean chick pea (we call them garbanzos in Spanish) balls are not supposed to be hard to make, but I have struggled mightily with one recipe after another, unable to get one that was crunchy outside, creamy yet nutty inside, that would hold together nicely for me in the pan.

I freely admit that I used beans from a can. I have tried and tried to make them by soaking dried chick peas. I hated the grainy texture of the few that didn’t completely disintegrate in the skillet. Using canned chick peas is a small defeat on the path to greater victory. I didn’t even riff off any particular recipe…I just combined flavors that had worked out in the past with techniques that had sort of worked out, and went for the can opener for my main ingredient.

Pedro of the “mostly vegan except when it’s not” crazy-ass diet loved them. Leandro of the “I hate garbanzos because I don’t like the way they look” declaration loved them. Pasta Frittata: A delicious solution for leftovers!

The frittata was a wonderful pick-me-up after a morning of unsuccessful fishing. It fueled us just enough to keep trying. I have yet to get the recipe for Deborah’s version but it reminded me that I have been sitting on my own frittata recipe for a couple of weeks and it is high time to share it with you, especially during summer high season for eggs!

A frittata is a wonderful way to take tiny bits of this and that and bind them in egg to make a hearty yet light picnic-worthy meal that is totally fun. You can slice them into wedges and make them into finger food, or serve them on a proper plate with salad greens and crusty bread, sliced thin.

I learned to make them in Italy, where folks take leftover pasta and cook it up with eggs so it is similar to a Spanish tortilla or an omelette with the ingredients blended into the egg as opposed to being wrapped in egg. You will want a skillet that can go from stove top to broiler to finish the top. The following recipe is designed to use up leftovers, but you may also want to try my Duck Egg and Asparagus Frittata or a classic Spanish Tortilla.

Easy Summer-Squash Slaw (remoulade of zucchini and yellow squash)

Summer squashes are starting to appear in farmer’s markets (and, in the case of zucchini/courgettes, in my garden!) …so…since they tend to be very prolific and an integral part of weekly farm shares all summer long and are also cheap in supermarkets at this time of year — it is time to start getting good recipes together!

Summer squashes — which include yellow squash, also called marrow; yellow crookneck squash; and zucchini, also called courgettes — are pretty good for you according to Self.com, are delicious, and lend themselves to many great dishes, So there is no reason to be sick of them by August or to refuse your neighbors’ offers of extra bounty when they get overwhelmed with what they’ve grown.

Mind you, I may have fewer than anticipated…some critter, which may or may not be the cutworm, sliced off several of my zucchini flowers before they could produce the magic green wands….grrrrrrr.

Today I went for something different – a quickie slaw alternative called remoulade, like the French classic Celeriac remoulade. This one integrates the garden vegetables that most lend themselves to grating. You can mix and match them however you like!

Easy Summer Squash Remoulade

(makes side salad for 2; multiply recipe for a crowd!)

2 Cups mix and match: zucchini/yellow squash/hakurai turnip/mild radish, grated with a large hole grater.

Squeeze of lemon*

1 Tbs grated red onion

1-2 Tbs prepared mayonnaise

1 tsp your preferred smooth mustard

Generous pinch salt

Pinch of freshly grated black pepper, if desired

Mix all ingredients in a medium bowl. Adjust seasoning to taste and serve as an alternative to cole slaw.

*If there will be a lag between grating the vegetables and making the remoulade, add lemon juice to the waiting vegetables to prevent browning.

Cilantro & Parsley Pesto Variations With Queso Fresco and Without Nuts

We’re moving on up! I was invited to do a cooking demonstration recently at The Old Country Road School, a K-5 school in the Hicksville Union Free Public School District. The school was celebrating its successful garden project, now in its third year! It being a school, I figured it would be a hoot to let my then-five-, now-six-year-old show everyone to make one of his favorite sauces – hand-ground basil pesto! I mean, if a five-year-old can do it, why can’t everyone?

He was a star, waving the garlic around, handing out basil for the kids and their parents to feel and smell, and smashing the pesto into a paste with great gusto. He wasn’t a bit nervous, but I think there are a few Food Network stars who should be…Come to think of it, maybe I should be nervous too?
