You know, I LOVE gazpacho, but no one in my family does so I never make it…perhaps this is the summer to do it anyway? I think I’ll have a party…what’s your recipe…?
Wow, that’s surprising! It does keep for a few days and you can take it to work or picnics in a flask to keep it cool. I find it always tastes best after sitting overnight in the fridge anyway. Here’s the recipe I use:
